AB  - The aim of the present study was the optimization of the extraction conditions (particle size, solid-to-solvent ratio, extraction time and procedure) via total polyphenol content and radical scavenging activity, using wild thyme (Thymus serpyllum L.) as a natural source of polyphenols. According to the total polyphenols yield, particle size, solvent-to-solid ratio, and extraction technique have shown statistically significant influence, whereas the exposure time has not been a relevant factor. In all three extraction procedures (maceration, heat-and ultrasound-assisted extraction), the highest polyphenols yield was reached using the smallest plant particles and the highest solvent-to-solid ratio. Moreover, polyphenols content was significantly higher after ultrasound-assisted extraction, in comparison to the extraction at room and high temperature. According to the antioxidant recovery, the influence of different extraction parameters varied depending on the applied antioxidant tests and extraction procedures. 2,2'-azino-bis-(3-ethylbenzothiazoline-6-sulfonic acid)-ABTS radical scavenging capacity of extracts followed the next trend: maceration and ultrasound-assisted extraction  gt  heat-assisted extraction , while in 2,2-diphenyl-1-picrylhydrazyl-DPPH neutralization: ultrasound-assisted extraction  gt  heat-assisted extraction  gt  gt  maceration. The study represents an important step in the formulation of antioxidant-rich extracts with potential use in food, pharmaceutical, and cosmetic industry.

AB  - In the present study, spray-dried Thymus serpyllum extracts obtained by using four extraction
techniques (maceration, heat-assisted extraction, extraction in ultrasound bath and extraction by
ultrasound probe) were characterized through determination of total polyphenols and total
flavonoids contents, antioxidant capacity, zeta potential, bulk density and solubility. Polyphenols
yield was statistically higher in the extract obtained by ultrasound probe, in comparison to the
extracts prepared using maceration, heat-assisted extraction and extraction in ultrasound bath.
On the other hand, extraction technique did not show statistically significant influence on the
flavonoids concentration. Furthermore, extraction procedures did not show significant effect on
antioxidant neutralization of DPPH radicals, while flavonoids yield had correlation with the
DPPH radical-scavenging capacity assay. However, the extracts obtained using maceration and
ultrasound waves (ultrasound bath) have shown significantly better antioxidant capacity in the
preservation of β-carotene, compared to the extracts prepared by using high temperature and
ultrasound probe. The extract obtained in maceration has shown statistically better stability
(higher absolute value of zeta potential), compared to the extracts prepared using high
temperature and ultrasound waves. According to the results of Pharmacopoeia test, bulk density
of spray-dried T. serpyllum extracts was ranked by significance in the following order: heatassisted extraction>ultrasound bath and ultrasound probe>maceration. Relatively high
solubility of spray-dried extracts has been found in the following order: maceration>ultrasound
bath and ultrasound probe>heat-assisted extraction. Spray-dried T. serpyllum extract prepared
using maceration represents a powder with satisfying physicochemical properties, as well as a
good source of substances with significant antioxidant activity, particularly in emulsions, which
enable its use in functional food and pharmaceutical products.

AB  - The aim of the present study was the examination of the impact of β-sitosterol and gentisic acid on the characteristics of 1,2-dipalmitoyl-sn-glycero-3-phosphocholine(DPPC) liposomal particles: (a) bilayer permeability (fluorescence spectroscopy),(b) particle size, polydispersity index (PDI) and zeta potential (photon correlation spectroscopy) and (c) thermal properties (differential scanning calorimetry).β-sitosterol induced the increase of liposomal bilayer rigidity, due to rearranging of the phospholipid chains, while gentisic acid enhanced the membrane fluidity, due to the reduced orderliness and the increase of phospholipid dynamics. The inclusion of β-sitosterol in liposomes caused a significant increase in particle diameter and PDI, while the encapsulation of gentisic acid did not have influence on particle size distribution. Apart from that, the presence ofβ-sitosterol resulted in the significant zeta potential increase, and thus a better stability of liposomal spheres(in the absence and in the presence of gentisic acid). β-sitosterol decreased main transition temperature (Tm) and phase transition enthalpy (∆H), and caused the disappearance of the pre-transition peak as well, whereas the presence of gentisic acid produced a slight decrease in Tm and increase of ∆H. Therefore, gentisic acid had more favourable, stabilizing interactions with phospholipids thanβ-sitosterol. Thus, it can be concluded that β-sitosterol is located in the bilayer interior between phospholipids acyl chains, and gentisic acid is incorporated near the outer leaflet of the phospholipid membrane, next to the polar head groups.β-sitosterol and gentisic acid loaded DPPC liposomal particles have a potential to be used in food and pharmaceutical products, due to the important individual and possible synergistic beneficial health properties ofβ-sitosterol and gentisic acid.

AB  - Multifunctional liposomes incorporating beta-sitosterol were developed for delivery of gentisic acid (GA). The interactions of both compounds with phospholipid bilayer were interpreted viaeffects of different beta-sitosterol content (0, 20 and 50 mol %) and different gentisic acid to lipid ratio (n(GA)/n(lip) from 10(-5) to 1) on membrane fluidity and thermotropic properties. Multilamellar vesicles of phosphatidylcholines (with size range between 1350 and 1900 nm) effectively encapsulated GA (54%) when n(GA)/n(lip) was higher than 0.01. Suppression of lipid peroxidation was directly related to concentration of GA. The resistance to diffusion of gentisic acid from liposomes increased for (similar to)50% in samples incorporating 50 mol % beta-sitosterol compared to sterol-free liposomes. Finally, simulated in vitro gastrointestinal conditions showed that the release was mainly affected by low pH of simulated gastric fluid and the presence of cholates in simulated intestinal fluid, rather than by enzymes activity.

AB  - Thymus serpyllum L. (Lamiaceae), well-known as wild thyme, is a perennial subshrub, abundant in polyphenols compounds, which possess antioxidant, antimicrobial, antihypertensive, antispasmodic, antiinflammatory, anticarcinogenic, anti-allergic and anxiolytic properties. The optimization of extraction represents the first step in obtaining the maximum yield of active compounds from plant sources, which are safe and natural alternative to synthetic components. AB  - Pomegranate seeds are an excellent source of compounds with biological activity. In the present study, the pomegranate seed oil (PSO) was tested for antioxidant and cytotoxic potential. PSO was extracted by super-critical fluid extraction with previous treatment of seeds by microwaves and analysed for its fatty acid profile, carotenoid and tocopherol contents. PSO demonstrated to be a good source of polyunsaturated fatty acids (PUFAs) (83.5%), followed by monounsaturated fatty acid (MUFA) and saturated fatty acid (SFA) (9.5% and 7.0%, respectively). Concerning fatty acid profile, punicic (C18:3), oleic (C18:1) and linoleic (C18:2) acids were the predominant ones. Carotenoids and tocopherols were identified and quantified by HPLC. Results showed that the PSO was a good source of gamma-tocopherol as dominant among investigated compounds (128.6 mg/100 g). The extract was screened for its antioxidant activity using alpha-TEAC assay. Cytotoxic effect was determined by MTT test against malignant HeLa, LS174 and A549 cells (IC50 = 49.51-91.54 mu g/mL), and against normal MRC-5 and EA.hy926 cells (IC50  gt  200 mu g/mL). The best effect was exhibited on cervix adenocarcinoma cell line while no cytotoxicity was found for normal cells pointing out PSO safety.

AB  - Budući da je većinu aktivnih komponenata biljaka nemoguće sintetisati u
laboratoriji, najbolja opcija je njihova ekstrakcija iz prirodnih izvora. U
datom eksperimentu, korišćena je herba majčine dušice (Thymus serpyllum)
i tri metode ekstrakcije (maceracija, ultrazvučna i mikrotalasna ekstrakcija).
Karakterizacija ekstrakata je urađena kroz određivanje sadržaja polifenola,
flavonoida, šećera i peptida u liofilizovanim ekstraktima majčine dušice.
Metoda ekstrakcije nije imala statistički značajan uticaj na koncentraciju
polifenola u ekstraktima, dok je prinos flavonoida bio statistički značajno
niži u ekstraktu dobijenom u mikrotalasnom reaktoru. Sa druge strane,
procenat šećera i peptida je bio statistički značajno veći u mikrotalasnom
ekstraktu, u poređenju sa ekstraktima dobijenim maceracijom i ultrazvučnim
talasima. Antioksidativna aktivnost ispitana u tri različita testa dala je
sledeće rezultate - sva tri ekstrakta su ostvarila isti antioksidativni potencijal
u neutralizaciji ABTS∙+ slobodnog radikala; ekstrakt dobijen ultrazvučnom
sondom pokazao se kao najbolji donor atoma vodonika ili elektrona
slobodnom DPPH.

AB  - Since the majority of plant active substances are impossible to synthesize in
the laboratory, the best option is their extraction from natural sources. In the
present study, wild thyme (Thymus serpyllum) herb and three extraction
techniques were used (maceration, ultrasound- and microwave-assisted
extraction). Characterisation of extracts was carried out through
determination of total polyphenols, flavonoids, sugars and peptides in
lyophilized wild thyme extracts. Extraction technique did not show
statistically significant influence on total polyphenols content, while the
flavonoids yield was significantly lower in extract obtained using microwave
reactor. On the other hand, percentage of sugars and peptides was
statistically higher in microwave extract, in comparison to extracts obtained
using maceration and ultrasound. Antioxidant activity tested in three
different assays has given the following results – all three extracts have
achieved the same antioxidant potential in neutralization of ABTS∙+ free
radical; extract obtained using ultrasound probe has shown as the best
donor of hydrogen atom or electron to the free DPPH. radical; the product
of microwave-assisted extraction has reached the highest percentage of
preserved β-carotene. Lyophilized wild thyme extracts represent a good
source of components with significant antioxidant activity, which can lead to
their use in food and pharmaceutical industry, as active substances and an
alternative to the synthetic antioxidants, in order to improve human health.

AB  - Microwave radiation was suggested as a pretreatment technique to increase the yield of pomegranate seed oil. Seeds were pretreated at 100, 250 and 600 W during 2 and 6 min and then extracted by supercritical carbon dioxide (scCO(2)) in high pressure unit as well as by n-hexane in Soxhlet apparatus. Even at the lowest microwave pretreatment parameters applied (100 W for 2 min) increased the yield of seed oil obtained by both extraction techniques compared with untreated seeds (from 27.7 to 34.0% and from 21.6 to 25.5% for Soxhlet and scCO(2) extractions, respectively). Maximal oil yield in Soxhlet extraction (36.3%) was obtained with microwave radiation of 600 W for 6 min while for scCO(2) extraction maximal oil yield (27.2%) was with 250 W for 6 min microwave radiation pretreatment. The qualitative and quantitative composition of fatty acids of the obtained oils was determined by gas chromatography/flame ionization detection and gas chromatography/mass spectrometry. Punicic acid was the most abundant fatty acid in pomegranate seed oil ( gt  60%). Microwave pretreatment of seeds showed negligible influence on profile and the amount of fatty acids in obtained extracts, compared with its significant influence on extraction yield. Our results recognize microwave pretreatment as a promising technique for intensification of oil extraction from pomegranate seeds.

AB  - In the present study, the influence of different encapsulation techniques (lyophilization and spray drying) on gelatin, as a carrier system for delivery of polyphenols compounds, on wild thyme extracts and on encapsulated extracts was investigated. FTIR analyses has shown the presence of carbohydrates, polysaccharides, polyphenols, flavonoids, monoterpenes and carboxylates in the dried extracts, while FTIR spectrum of the encapsulated extracts has shown almost exclusively gelatin-based stripes, indicating the efficient encapsulation of the active ingredients of the extracts and therefore their protection. Scanning electron microscopy has shown that the lyophilization process produced irregularly shaped particles, while spray drying formed spherical and pseudo-spherical particles with rough surface. Using the method of diffraction of laser light, it has been found that spray dried encapsulate possessed significantly lower particle size and significantly better uniformity in comparison to the lyophilized sample. According to the results obtained in differential scanning calorimetry, endothermic peak of lyophilized gelatin encapsulate appeared at higher temperature, thus it can be concluded that lyophilized sample was more thermostable than spray dried parallel. Additionally, the values of enthalpy of gelatin encapsulates were significantly higher compared to pure extracts, which confirmed the presence of stabilizing interactions between the encapsulated components and a carrier.
AB  - U prikazanoj studiji ispitan je uticaj različitih metoda inkapsulacije (liofilizacije i sprej sušenja) na želatin, kao nosač polifenolnih komponenata, na ekstrakte majčine dušice i na njihove želatinske inkapsulate. FTIR analiza je pokazala prisustvo ugljenih hidrata, polisaharida, polifenolnih komponenata, flavonoida, monoterpena i karboksilata u osušenim ekstraktima, dok su FTIR spektri inkapsulata pokazali isključivo trake koje potiču od želatina, što ukazuje na efikasno obavijanje aktivnih komponenata ekstrakata i samim tim njihovu zaštitu. Skenirajuća elektronska mikroskopija je pokazala da proces liofilizacije daje čestice nepravilnog oblika, dok se sprej sušenjem formiraju male čestice sferičnog i pseudo-sferičnog oblika, sa neravnom površinom. Primenom difrakcije laserske svetlosti utvrđeno je da veličina čestica sprej osušenog inkapsulata ima značajno manju vrednost i da je uniformnost značajno veća nego kod liofilizovane paralele. Ispitivanjem termičkih karakteristika, primenom diferencijalne skenirajuće kalorimetrije, pokazano je da se kod liofilizovanog želatinskog inkapsulata endotermni pik nalazi na višoj temperaturi, te se može zaključiti da je pomenuti uzorak termički stabilniji u odnosu na sprej osušen. Dodatno, vrednosti promene entalpije želatinskih inkapsulata ekstrakata bile su značajno veće nego kod čistih ekstrakata, što svedoči o prisustvu stabilizirajućih interakcija između inkapsuliranih komponenata i nosača.

AB  - Despite the fact that Thymus serpyllum is well-known medicinal plant and its chemical profile and biological activity have been investigated, there is no detailed study regarding the influence of different techniques and conditions on the extraction of polyphenolic compounds from Serpylli herba. The aim of this study was optimization of the extraction parameters that improves the efficiency of polyphenols extraction from T. serpyllum: particle size, solid-to-solvent ratio, solvent type and extraction time, by using maceration, heat- and ultrasound-assisted extraction (HAE and UAE). The extraction efficiency was expressed via total polyphenol content (TPC) and total flavonoid content (TFC). The statistical analysis (one-way ANOVA and full factorial design) has revealed that the optimal conditions for achieving the best polyphenols yield were particle size of 0.3 mm, 1:30 solid-to-solvent ratio and 50% ethanol, as environmentally friendly extraction medium, while extraction time has not shown statistically significant influence on polyphenols concentration, in all procedures. Under these conditions, the measured TPC was 26.6 mg GAE/L in maceration, 29.8 mg GAE/L in HAE and 32.7 mg GAE/L in UAE, which was in agreement with the predicted values, while TFC was 143 mg CE/L, 12.4 mg CE/L and 16.7 mg CE/L for maceration, HAE and UAE, respectively. According to total polyphenols yield, the efficiency of the extraction methods for all variables was ranked by significance in the following order: UAE  gt  HAE  gt  maceration, whereas total flavonoids yield was the highest in UAE, although there was no statistically significant difference between maceration and HAE. According to our results, UAE could be selected as the most successful and suitable technique for extraction of bioactive polyphenolic compounds from Serpylli herba. Using LC/MS and HPLC analysis, 9 polyphenolic compounds were identified and quantified: 6,8-Di-C-glucosylapigenin, chlorogenic acid, 6-hydroxyluteolin 7-O-glucoside, caffeic acid, luteolin 7-O-glucuronide, apigenin glucuronide, salvianolic acid g isomer, rosmarinic acid and salvianolic acid I. This study was an initial step in production of polyphenols-rich wild thyme extracts aimed to be used for formulation of foodstuffs and medicines.

AB  - The present study was designed to establish and optimize a method for extracting natural bioactive compounds from Thymus serpyllum which possess antioxidant, antimicrobial, antispasmodic and stimulant properties. Ultrasound-assisted extraction (UAE) is a welle-stablished method in the processing of plant material, particularly for extraction of bioactive substances such as polyphenols. The influential factors including extraction time (3, 7 and 10 min), solid:solvent ratio (1:10, 1:20 and 1:30) and particle size (0.3, 0.7 and 1.5 mm), have been studied to optimize the extraction process, while using 30% ethanol as an extraction medium and amplitude set to 65%. The yield of UAE was expressed via total phenol content and antioxidant activity of the obtained extracts. The optimum process parameters were found to be: extraction time, 3 min; solid:solvent ratio, 1:30; particle size, 0.3 mm. Under these conditions, the yield of total polyphenols was raised up to 23.03 mg/L GA and the highest antioxidant activity was recorded (10.32 mmol/mg Trolox and IC50 of 3.00 mg/ml).

Chokeberry (Aronia melanocarpa L.) extract loaded in alginate and alginate/inulin system

AB  - Chokeberry (Aronia melanocarpa) is a rich source of polyphenols with confirmed health benefits. Microencapsulation tehnique is a promising tool for improving its polyphenols functionality, stability and bioavailability. Electrostatic extrusion process was carried out to obtain microbeads with encapsulated chokeberry extract. The effects of the carrier type (alginate of low and medium viscosity), addition of inulin as filler, and the needle diameter (18, 20, 22 gauges) on the morphological characteristics and release properties of the microbeads were studied. Particles obtained with medium viscosity alginate carrier (1.5% w/v), using inulin as filler (5% w/v) and medium needle size (20 gauges) showed the best results in the release studies. Drying process affected the encapsulation efficiency, the amount of encapsulated polyphenols increased from 0.24 mg GAE/g in hydrogel beads to 3.57 mg GAE/g in freeze dried beads, and the release profile of encapsulated extracts was prolonged to 40 min. SEM micrographs confirmed that the addition of inulin as filler improved the final properties of the microbeads, while FTIR analysis showed that the extract was successfully incorporated into the particles. Due to the extended storage and stability, dry microbeads showed the best potential as a delivery system suitable for pharmaceutical or functional food industry.

AB  - Wild Thyme (Thymus serpyllum, Lamiaceae) is a subshrub from the Lamiaceae family, with
plants that are rich in essential oils and antioxidative polyphenolic substances. Reducing
potential of phenolic compounds gives them a special role in the adsorption and neutralization
of free radicals. In the present study, we used a method of maceration, lasting 15, 30, 60 and 90
minutes, degree of fragmentation 0.7, two types of solvent (50% and 96% ethanol) and ratio
drugs:solvent 1:20. In Folin-Ciocalteu method, the higest total polyphenols content was obtained
in 50% ethanolic extract after 90 minutes of extraction, while the lowest total polyphenols
content was recorded in 96% ethanolic extract after 15 minutes (1173,21 mg GA/g DW and
102,56 mg GA/g DW, respectively). Ethanolic extracts were analized for antioxidant activity by
using spectrophotometric methods, DPPH method and ABTS method. There is signifficant
difference between antioxidant activity in 50% and in 96% ethanolic extracts. The worse result
was obtained with 96% ethanol as extractant after 15 minutes of maceration (IC50 31,323 mg/ml
and 0,116 mM Trolox/g DW). This study found that both total polyphenols and antioxidant
activities determined were significantly affected by the type of solvent and time of extraction.
Also, the levels of total soluble phenolic compounds were positively correlated with free radical
scavenging activities against DPPH and ABTS radicals.
AB  - Majčina dušica (Thymus serpyllum, Lamiaceae) je višegodišnji busen iz familije Lamiaceae, koju
čine biljke bogate etarskim uljima i antioksidativnim polifenolnim supstancama. Antioksidativnu
aktivnost fenolne komponente duguju svom redukujućem potencijalu, koji im daje posebnu ulogu
u adsorpciji i neutralizaciji slobodnih radikala. U ovoj studiji ekstrakti T. serpyllum su dobijeni
metodom maceracije, u trajanju od 15, 30, 60 i 90 minuta, korišćenjem droge stepena
usitnjenosti 0,7, dva rastvarača (50% i 96% etanola) i odnosa droga:rastvarač 1:20. FolinCiocalteu metodom je određen sadržaj ukupnih polifenola, gde je 50% etanolni ekstrakt, nakon
90 minuta ekstrakcije sadržao najveću količinu ukupnih polifenola, dok su najniže vrednosti

AB  - Wild Thyme (Thymus serpyllum) is perennial, herbaceous plant of Lamiaceae family. It has
aromatic, antioxidant, antiseptic, anthelmintic, repelent, antirheumatic, expectorant,
antispasmotic, carminative, sedative and diuretic properties. Optimization of the extraction by
maceration of T. serpyllum was carried out through varying degrees of fragmentation (0.3, 0.7
and 1.5) and the type of solvent (water, ethanol and mixtures of those in weight ratio 50:50 and
70:30). Extraction efficiency was expressed via total polyphenols content and antioxidant
activity. The highest total polyphenols content and antioxidant activity were recorded in 50%
ethanolic extract, with a degree of fragmentation of 0.3, 921,51 mg GA/g DW and 0,538 mM
Trolox/g DW, respectively. No significant differences were observed between total polyphenols
and antioxidant activity in water and in 70% ethanolic extracts. The lowest total polyphenols
content and antioxidant activity were obtained in 96% ethanolic extract (70.73 mg GA/g DW and
0,142 mM Trolox/g DW, respectively).

Optimization of extraction of stinging nettle leaf phenolic compounds using response surface methodology

AB  - A full three level factorial design was implemented for optimization of extraction parameters in order to maximize total phenolic (TP) yield from stinging nettle leaf. Factors considered were percentage of methanol in solvent (X-1 : 50-100% methanol) and extraction time (X-2: 30-90 min), and maceration was used as extraction method. A second-order polynomial model was applied for fitting experimental data and predicting the response, and this mathematical model produced a satisfactory fit (R-2 = 0.993,p lt 0.01). The optimal extraction conditions were 54% aqueous methanol and 38 min extraction time, while maximal theoretical TP yield was 8.9 mg GAE/g DW. Solvent composition significantly affected extraction efficiency causing decrease of TP yield with increase of methanol percentage. On the other hand, extraction time did not influence significantly efficiency of extraction. Using LC/MS and HPLC analysis we detected and quantified three most abundant phenolic compounds: 2-O-caffeoyl malic acid, chlorogenic acid, and rutin. Comparison between maceration and ultrasound-assisted extraction (UAE) obtained extracts based on TP content as well as antiradical activity and HPLC results, showed that UAE have a better extraction capability affecting yield and time of extraction. Of all tested extracts, 54% aqueous methanolic extracts obtained with UAE and 38 min extraction time had the highest TP content.

AB  - Familija Lamiaceae (Usnatice) obuhvata veliki broj kosmopolitskih
vrsta, među kojima i vrste T. vulgaris (timijan) i T. serpyllum (majčina
dušica), koje karakteriše prisustvo etarskih ulja i fenolnih jedinjenja.
Timijan predstavlja višegodišnju polužbunastu biljku. Čašicu i krunicu
gusto pokrivaju trihome u kojima se sintetišu i skladište etarska ulja.
Koristi se list ili zeljasti nadzemni deo biljke u cvetu i etarsko ulje.
Majčina dušica je višegodišnja zeljasta biljka. Cvetne grane su
ravnomerno prekrivene žlezdanim trihomama. Koristi se nadzemni deo
biljke u cvetu. Herbal Medicinal Product Committee (HMPC)
klasifikuje herbu i etarsko ulje timijana kao tradicionalni biljni lek koji
se koristi kao ekspektorans kod kašlja udruženog sa prehladom.
Potvrđena primena majčine dušice je u tretmanu kašlja, bronhitisa i
upalnih procesa gornjih disajnih puteva. Snažnu antioksidativnu
aktivnost timijan duguje visokoj koncentraciji polifenolnih kiselina i
flavonoidima. Timol i karvakrol prisutni u etarskom ulju majčine dušice
inhibiraju lipidnu peroksidaciju i ispoljavaju antimikrobno dejstvo na
različite vrste mikroorganizama. Dugogodišnja tradicionalna primena
aromatičnih i lekovitih biljaka, pritisak potrošača da se toksični i
kancerogeni sintetski aditivi zamene prirodnim supstancama i pojava
multirezistentnih sojeva mikroorganizama povećavaju interes za
istraživanjem datih biljnih vrsta, što bi omogućilo njihovu širu primenu
u medicini, prehrambenoj, farmaceutskoj i kozmetičkoj industriji.
AB  - The Lamiaceae family, which contains about 200 genus and 3000 species,
has a cosmopolitan distribution. Plants of this family are rich in essential oils and
phenol compounds. Thymus vulgaris (Thyme) is perennial, subshrub plant which
belongs to family of Labiates. Calyx and corolla are covered by dense gleaming
glands that eradiate essential oil. Leaves or herba, and essential oils are used.
Thymus serpyllum (Wild Thyme) is perennial, herbaceous plant. Leaves are
evergreen, small and oval. Commitee on Herbal Medicinal Products (HMPC)
classifies thyme herba and essential oil as a traditional herbal medicine used as
expectorant in cough associated with cold. It is used in folk medicine to treat many
diseases, including respiratory disease (cough pertussis, bronchitis and asthma),
and has analgesic properties. Wild Thyme is approved for use in treatment of
cough and bronchitis. It is unproven to treat kidney and bladder disorders. It is also
used internally for dysmenorrheal, colic-like pain, and whooping cough. Thymol
and carvacrol from essential oils of Thyme and Wild Thyme inhibit lipid
peroxidation and manifest strong antimicrobial activity against different kinds of
microorganisms. All the aromatic and medicinal plants available worldwide have
been used for their preservative and medicinal values. Polyphenolic
phytochemicals in traditionally used medicinal plants act as powerful antioxidants,
which aroused an increasing interest in their application in functional food
development. Recently, there has been growing considerable interest in extracts
and essential oils of aromatic plants for the development of alternative food
additives, in order to prevent the growth of food-borne pathogens or to delay the
onset of food spoilage.

cough and bronchitis. It is unproven to treat kidney and bladder disorders. It is also
used internally for dysmenorrheal, colic-like pain, and whooping cough. Thymol
and carvacrol from essential oils of Thyme and Wild Thyme inhibit lipid
peroxidation and manifest strong antimicrobial activity against different kinds of
microorganisms. All the aromatic and medicinal plants available worldwide have
been used for their preservative and medicinal values. Polyphenolic
phytochemicals in traditionally used medicinal plants act as powerful antioxidants,
which aroused an increasing interest in their application in functional food
development. Recently, there has been growing considerable interest in extracts
and essential oils of aromatic plants for the development of alternative food
additives, in order to prevent the growth of food-borne pathogens or to delay the
onset of food spoilage.",

AB  - Familija Lamiaceae (Usnatice) obuhvata veliki broj kosmopolitskih vrsta, među kojima i vrste T. vulgaris (timijan) i T. serpyllum (majčina dušica), koje karakteriše prisustvo etarskih ulja i fenolnih jedinjenja. Timijan predstavlja višegodišnju polužbunastu biljku. Čašicu i krunicu gusto pokrivaju trihome u kojima se sintetišu i skladište etarska ulja. Koristi se list ili zeljasti nadzemni deo biljke u cvetu i etarsko ulje. Majčina dušica je višegodišnja zeljasta biljka. Cvetne grane su ravnomerno prekrivene žlezdanim trihomama. Koristi se nadzemni deo biljke u cvetu. Herbal Medicinal Product Committee (HMPC) klasifikuje herbu i etarsko ulje timijana kao tradicionalni biljni lek koji se koristi kao ekspektorans kod kašlja udruženog sa prehladom. Dugogodišnja tradicionalna primena aromatičnih i lekovitih biljaka, pritisak potrošača da se toksični i kancerogeni sintetski aditivi zamene prirodnim supstancama i pojava multirezistentnih sojeva mikroorganizama povećavaju interes za istraživanjem datih biljnih vrsta, što bi omogućilo njihovu širu primenu u medicini, prehrambenoj, farmaceutskoj i kozmetičkoj industriji.
