AB  - The solvent influence on absorption spectra of food azo dyes was examined by the method of Linear Solvation Energy Relationships (LSER). For this purpose, six azo dyes were used: tartrazine (E 102), ponceau 4R (E 124), azorubin (E 122), brilliant black (E 151), amaranth (E 123) and gelb orange S (E 110). Absorption spectra of dissolved azo dye have been recorded in the wavelength range of visible radiation, or from 380 to 760 nm, in eight solvent of different polarity. The choice of the solvent was limited due to the high polarity of the azo dye molecules themselves. The effect of solvent dipolarity/polarizability and solvent/solute hydrogen bonding interaction are analysed by means of the linear solvation energy relationship (LSER) concept proposed by Kamlet and Taft. The linear correlation of the absorption maxima with parameters of Kamlet-Taft solvatochrome equation yielded satisfactory results.
AB  - Uticaj polarnosti rastvarača na apsorpcione spektre prehrambenih azo boja ispitivan je metodom linearne korelacije energije solvatacije (LSER). U ovu svrhu korišćeno je šest prehrambenih azo boja i to: tartrazin (E 102), ponceau 4R (E 124), azorubin (E 122), brilijant crna (E 151), amarant (E 123) i gelb oranž S (E 110). Apsorpcioni spektri rastvorenih azo boja određeni su u talasnom opsegu vidljivog zračenja, odnosno u opsegu od 380 do 760 nm, u osam rastvarača različite polarnosti. Polarnost samih boja je uticala na izbor malog broja polarnih rastvarača. Spektre ispitivanih azo boja karakteriše jedan apsorpcioni maksimum. Efekat polarnosti rastvarača i efakat vodoničnog vezivanja rastvarač-rastvorena supstanca ispitivan je primenom KamletTaftove solvatohromne jednačine. Linearna korelacija apsorbcionih maksimuma sa parametrima Kamlet-Taftove solvatohromne jednačine dala je zadovoljavajuće rezultate.

AB  - Blood lead levels (BLLs) have been falling steadily worldwide due to restricted use of lead (Pb) and its compounds. although they remain above preindustrial Pb levels. Elevated BLL can still be found in children living near secondary Pb smelters that represent around 50% of Pb production. There have been no studies on Pb exposure in children living in Serbia ever since the 1980s. The aim of this study was to evaluate the BLLs in children living in two villages in Serbia (Zajača, the location of a secondary lead smelter, and Paskovac, 5 km away), identify the primary determinants of children's BLLs, and investigate the impact of BLLs on children's health symptoms and school achievement. The study was conducted in 2011 on 127 children, aged 1–18 years, whose BLLs were measured using inductively coupled argon plasma mass spectrometry (ICP-MS). The median BLL in children was 12 μg/dl, with a significantly higher value of 17.5 μg/dl in Zajača, compared to 7.6 μg/dl in Paskovac. Only 1 out of 75 and 12 out of 52 children from Zajača and Paskovac, respectively, had BLLs below the CDC recommended 5 μg/dl level. Living near the smelter resulted in 19 times, and having a father who works in the plant 4 times higher odds of elevated BLLs. No significant effects of elevated BLLs health symptoms were seen in this study. BLLs of children living near a battery recycling plant in Serbia, an upper-middle income European country, were in the range and even higher than those of children living in developing countries. For the first time, the contribution of environmental and take-home lead exposure was quantified using mixed-effect modeling, and our results indicate a contribution of 25–40% of the take-home lead exposure to the BLLs of children living in the vicinity of a secondary lead smelter.

Cadmium in pheasant tissues as a bioindicator of environmental pollution in 23 Serbian districts

AB  - Concentrations of cadmium (Cd) were measured in leg muscle and liver of pheasants (n=316) from 23 different Serbian regions under the Serbian National Residue Monitoring Program during 2013-2015. Levels of Cd in pheasant tissues were determined by inductively-coupled plasma mass spectrometry (ICP-MS). Most of the pheasants examined had Cd in their tissues. In the third year of the residue monitoring program, the Cd concentrations detected in leg muscles were nearly double the levels detected in the first year. The highest Cd levels in muscles were measured in pheasants from Podunavlje, Macva and Zlatibor districts. All leg muscle samples had Cd concentrations below permitted maximum residue levels (MRL=0.05 m kg-1). However, fifteen liver samples had Cd levels that exceeded the permitted MRL (0.50 mg kg-1). The number of non-compliant pheasant liver samples increased over the years. The lowest mean Cd level in pheasant livers was measured in birds from Morava district (0.035 mg kg-1), while the highest was in birds from Branicevo district (0.574 mg kg-1). This monitoring program shows that the Cd levels measured in pheasants, which are suitable bioindicators of environmental pollution, indicate that environmental pollution with Cd is increasing.

High efficiency of supercritical rosemary extract in long term oxidative stabilization of pork liver pâté

AB  - The study was aimed to investigate potential of supercritical extract of rosemary (RSE) in the long term oxidative stabilization of pork liver pâté (five years). Determination of peroxide value (PV) and thiobarbituric acid (TBA) assay were used to assess and compare lipid deterioration in pâté samples containing the same content of RSE, butylated hydroxyanisole (BHA) and commercial rosemary antioxidant Flavor'Plus (FP).The first evidence of primary oxidation was reported after five years in all the samples except in those containing low concentrations of RSE (200-500 mg/kg) and FP (500 mg/kg). Increasing concentration of the RSE in pâté (1000 mg/kg) resulted in the lower efficiency in preventing primary oxidation of lipids (PV=0.27 meq/kg). The BHA was reported for the lowest efficiency among tested antioxidants (PV=0.26-0.3 meq/kg). The TBA assay showed no evidence of secondary oxidation products in all the samples due to insufficient amount of formed peroxides. General chemical composition of the pâté samples after five years was not significantly different from the initial one. Since RSE is isolated and deodorized using supercritical fluid technology it doesn't contain traces of organic solvents. For that reason, the RSE would provide an added value to commercial liver pâté due to both natural origin and potential bioactive properties.
AB  - Studija je imala za cilj da istraži potencijal superkritičnog ekstrakta ruzmarina (RSE) u dugoročnoj oksidativnoj stabilizaciji jetrene svinjske paštete (pet godina). Određivanje peroksidne vrednosti (PV) i tiobarbiturne kiseline (TBA test) korišćeni su za procenu i poređenje lipidnog pogoršanja u uzorcima paštete koji imaju isti sadržaj RSE, butilovanog hidroksianizola (BHA) i komercijalnog antioksidansa ruzmarina Flavor'Plus (FP). Prvi dokaz primarne oksidacije je zabeležen nakon pet godina u svim uzorcima osim u onim koji sadrže niske koncentracije RSE (200-500 mg/kg) i FP (500 mg/kg). Povećanje koncentracije RSE u pašteti (1000 mg/kg) je rezultovalo u slabijoj efikasnosti u prevenciji primarne oksidacije lipida (PV = 0,27 meq/kg).
