| sr |
dc.description.abstract | Since the majority of plant active substances are impossible to synthesize in the laboratory, the best option is their extraction from natural sources. In the present study, wild thyme (Thymus serpyllum) herb and three extraction techniques were used (maceration, ultrasound- and microwave-assisted extraction). Characterisation of extracts was carried out through determination of total polyphenols, flavonoids, sugars and peptides in lyophilized wild thyme extracts. Extraction technique did not show statistically significant influence on total polyphenols content, while the flavonoids yield was significantly lower in extract obtained using microwave reactor. On the other hand, percentage of sugars and peptides was statistically higher in microwave extract, in comparison to extracts obtained using maceration and ultrasound. Antioxidant activity tested in three different assays has given the following results – all three extracts have achieved the same antioxidant potential in neutralization of ABTS∙+ free radical; extract obtained using ultrasound probe has shown as the best donor of hydrogen atom or electron to the free DPPH. radical; the product of microwave-assisted extraction has reached the highest percentage of preserved β-carotene. Lyophilized wild thyme extracts represent a good source of components with significant antioxidant activity, which can lead to their use in food and pharmaceutical industry, as active substances and an alternative to the synthetic antioxidants, in order to improve human health. | sr |
